Three ways to spend time inside a working restoration — raw, unfinished, and utterly alive — mixed with the real luxury of French food, antiques and craft. Each Workshop welcomes a small group of guests into the Château itself: to hunt for treasures at the brocantes, to cook alongside our chefs, or to help bring her 18th‑century frescoes back to life.

Choose the length that suits you. Each stay includes full board, château beverages, shared accommodation and a curated itinerary — and every visit helps fund the restoration itself: a decade-long labour of love that has been peeling back the centuries, room by room, fresco by fresco, since the work began in 2013.

To stay within these walls is to take part in her restoration — each Workshop helping bring her back to life, one fresco, one meal, one market morning at a time.

The Château sits deep in the Ariège — Cathar country, at the foot of the Pyrenees, in a corner of France that still feels wonderfully undiscovered. Between Workshop activities, guests wander the antique fairs and vide‑greniers of Mirepoix, one of France’s best‑preserved medieval bastide towns; browse the Sunday morning market at Les Cabannes for cheese, honey and whatever the season offers; and, on the longer stays, descend into the Grotte de Niaux, where paintings on the cave walls have survived some 14,000 years. Afternoons might mean a guided hike into the high valleys, a paddle down the Ariège river, or simply a glass of local wine on the terrace as the light shifts on the mountains — this is rural France as the French themselves still live it: unhurried, deeply local, and entirely real.

Take leisurely strolls through mountain landscapes, browse the antique fairs and brocantes of bastide villages like Mirepoix, and uncover hidden treasures steeped in history — each moment an invitation to slow down and delight in the simple joys of rural France.

A Sample Day

After breakfast, a gentle stroll to the local market — stalls brimming with fresh produce and local crafts. In the afternoon, choose your adventure: join the restoration team helping restore the Château's 18th‑century frescoes, take a dip in the pool, play pickleball or tennis, or simply unwind.

Aperitifs in the atmospheric Renaissance kitchen, dinner en plein air under the open sky, and an outdoor movie screening with popcorn to close the night.

A culinary retreat where each day unfolds in the Château's own kitchen. Under the guidance of our chefs de cuisine, with market mornings for seasonal Ariège produce, hands-on cooking and live demonstrations — from rustic 18th‑century dishes once served at Gudanes to today's refined French classics. Come for the cuisine, stay for the history, and leave with new skills, a well-worn recipe or two, and unforgettable flavours.

A Sample Day

A stroll to the local market for fresh produce and crafts, then sweet and savoury cooking classes inspired by the 18th‑century Château Gudanes cookbook, with a picnic lunch.

Aperitifs with a talk on French table-setting and dining history, followed by an informal dinner of the day's creations.

Our fullest Workshop, where the rhythm of country life unfolds beneath towering peaks. Cooking classes rooted in 18th‑century tradition, hands-on restoration of the Château's frescoes, guided hikes, vide‑greniers, and days spent among vineyards, medieval towns and artisan villages — a harmonious blend of history, food, nature and personal renewal.

A Sample Day

Crêpe-making and a mimosa breakfast, a riverside picnic at the Pont du Diable, and an afternoon exploring the 17,000-year-old Niaux Cave and its Paleolithic paintings.

A wine-tasting aperitif in the drawing room, followed by dinner and an evening of poetry and prose.

Each Château bedroom welcomes you with fresh garden flowers and the calming scent of lavender. Beds are dressed in vintage monogrammed linens, ruffled pillows and floral sheets, with antique furnishings lending a refined, historic feel. Rooms are arranged for two guests (or three by request), each offering up to 70m² of comfort and privacy. Bathrooms are shared and beautifully appointed — the Château is still under restoration, and ensuite bathrooms aren't permitted under historic preservation rules.

Every day brings a new dining experience — leisurely breakfasts, garden picnics, alfresco lunches and elegant candlelit dinners, all prepared by our Château chefs using regional, seasonal ingredients drawn from the Ariège's own markets and producers: mountain cheeses, foie gras, magret de canard, wild mushrooms in season, and desserts drawn from recipes in the Château's own 18th‑century cookbook. A private selection of local wines, spirits and non-alcoholic drinks is offered with every meal.

On the first day, we'll meet you at 11am in the centre of Toulouse, collect your luggage and travel to the Château together. At the end of your stay, we'll leave the Château at 11am, arriving in Toulouse around 1pm — we can drop you at the airport, train station, or the centre of Toulouse. Private transport outside these times can be arranged at an additional cost.

Please note the cost of each Workshop excludes flights to and from Toulouse, personal spending money and travel insurance.

To book, a 10% deposit is required via credit card in Euros. The remaining balance is due 60 days before your stay, with a payment link sent prior — you're welcome to pay in instalments at your own discretion ahead of the final payment date. Full payment is required for bookings made within 60 days of the stay. Travel insurance is required for all guests.
